    The only real difference between a hot dog and head cheese is that the head cheese is upfront about what’s in it. I’m not sure you want to know what the hot dog makers consider “beef”…

    I just finished ear drum cleaning and preparing a whole hog head so that I can make my own hog’s head cheese. We like ours a bit meaty, so I buy a small Boston butt and add it to the hog’s head. The ear drums, eyes, teeth and hair are removed. The ears make nice crunch, and you can buy a few more to add to the head meat. You can make it as fat or lean as you like, and as hot as you like – it is absolutely wonderful. I agree with your statement about the hot dogs and other processed meats – what a difference.

    I love headcheese, but I am having a hard time finding it. Boars Head makes it but it is not very flavorful
    Do you know where in VANCOUVER,Wa. I can find a good headcheese?
